The new menu lets guests customize their meal by choosing a base—Steamed Tamale, Rice Bowl, Nacho Bowl, or Southwest Caesar Salad—paired with one of three delicious proteins: Citrus-Chipotle Chicken, Green Chili Pork, or Coca-Cola Cherry Braised Beef. For those looking to up the ante, additional portions or a second protein can be added for a small fee.

In addition to the build-your-own bowls, Pecos Bill also offers a variety of new à la carte options. Burger lovers can indulge in the Double Chili con Queso Burger, while plant-based diners will enjoy the flavorful Grilled Masa Flatbread. Guests can also complement their meal with savory sides like Barbecue-Cheddar Seasoned French Fries or Charro Beans. Those with a sweet tooth will want to try the new Sweet Corn Mousse or the Mexican Chocolate and Horchata Verrine.

Long-time favorites such as the Cilantro-Lime Rice and Strawberry Limeade Slushy remain on the menu, so guests can still enjoy the classics.

• Steamed Tamale: Steamed green chili-cheese tamale with stewed pinto beans, queso fresco, and pico de gallo
• Nacho Bowl: House-fried corn tortilla chips smothered with stewed pinto beans, chipotle queso, and pico de gallo
• Rice Bowl: Stewed pinto beans, cilantro-lime rice, cowboy caviar, pico de gallo, and queso fresco
